Ethiopian Cabbage and Potato Dish

      This easy and flavorful recipe brings together cabbage and potatoes in a delicious way. My Ethiopian friend introduced me to this dish at a potluck, and it's been a favorite ever since. No need to add extra liquid, as the vegetables release enough moisture while cooking.

Ingredients:

  • ½ cup olive oil
  • 4 medium carrots, thinly sliced
  • 1 medium onion, thinly sliced
  • ½ head green cabbage, shredded
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cumin, or to taste
  • ¼ teaspoon ground turmeric, or to taste
  • 5 medium potatoes, peeled and cut into 1-inch cubes

Directions:

  1. Heat the olive oil: In a large skillet, warm the olive oil over medium heat. Add the sliced carrots and onion, cooking and stirring for about 5 minutes, or until they begin to soften.

  2. Add the cabbage and spices: Stir in the shredded cabbage, sea salt, black pepper, cumin, and turmeric. Continue cooking for 15 to 20 minutes, stirring occasionally to combine the flavors.

  3. Add the potatoes: Once the cabbage is softened, add the cubed potatoes. Reduce the heat to medium-low, cover the skillet, and let everything cook for about 20 minutes, or until the potatoes are tender.
